These fish parcels are perfect for any BBQ evening: you only need a few minutes to prepare them, and if you like you can make the parcels in the morning and keep them in the fridge so they're ready to go on the BBQ in the evening. I've written the recipe for 2 people so you can easily double it for the right number of servings.

Fish on the BBQ: delicious cod parcels

These cod parcels are an easy and flavorful way to cook fish on the BBQ. With garlic oil, leek and lemon, you'll have a delicious dish on the table in no time.

  • BBQ
  • aluminum foil
  • small bowl

Ingredients

  • 2 cod fillets
  • 1/2 leek
  • 1/2 lemon
  • 6 tbsp good olive oil
  • freshly ground pepper & salt
  • 1 garlic clove
  • a handful of fresh parsley (I used flat-leaf)

Fish on the BBQ: delicious cod parcels

    1. Start by making the garlic oil. Pour the olive oil into a small bowl, crush the garlic into it and add a good amount of freshly ground pepper and salt.

    2. Pat the cod fillets dry with some kitchen paper and brush both sides with the oil. Wash the leek and slice it into rings.

    3. Place two sheets of aluminum foil on top of each other (this makes the parcels a bit sturdier) and spread the leek over them. Put the cod fillets on top.

    4. Finally, slice the lemon and place 3 slices on each cod. Now the papillotes (that's the official name) are ready for the BBQ.

Place the parcels on a very hot BBQ and let them cook for about 10 minutes. The cod is done when the flesh is nicely white and flakes easily. Serve the parcels straight in the foil so all the flavorful juices are preserved.

Nice with a fresh green salad and some crusty bread to mop up the garlic oil. Vary to taste with other fresh herbs like thyme or dill instead of parsley.
