It may be a slightly odd title, but it sums up exactly what this little dish is: a failed omelet that turned out so well I couldn’t resist writing the recipe down anyway. Two Chicks sent me their egg white in a bottle to try, and to test it I decided to make a lunch dish with it. Super handy, egg white in a bottle: no more separating eggs. Egg yolk is by no means unhealthy — quite the opposite — but using only the whites gives a lighter result. Especially nice when you’re making something with a lot of eggs but don’t want a heavy meal.

Okay, so the idea was to make a tasty omelet with spinach, ricotta and sun-dried tomatoes. The spinach was in the pan, I poured the egg over it and… one big mess up. Out of pure desperation I started stirring everything and finished the dish as best I could. Onto the plate, fork in and taste. Hey, that’s good! So let’s just make it a scrambled-egg recipe — it’s even easier than an omelet. Oh yeah, this lunch is not only tasty but also very healthy. I can imagine it’s also nice as a light meal if you want to work out afterwards, for example.

The tastiest failed omelet with spinach & sun-dried tomatoes

This dish is officially called a failed omelet, but the result is delicious: airy scrambled eggs with wilted spinach, creamy ricotta and sweet sun-dried tomatoes. Ready in a few minutes and perfect for a quick lunch or a light dinner.

Ingredients

  • About 8 tbsp egg whites (or 4 generous squeezes from the bottle)
  • 2 handfuls of spinach
  • 1 tbsp ricotta
  • 1 tbsp sun-dried tomatoes, finely chopped
  • salt & pepper from the mill

The tastiest failed omelet with spinach & sun-dried tomatoes

    1. Mix the egg whites with salt & pepper to taste.

    2. Heat some oil in the pan, add the spinach and let it wilt slightly.

    3. Pour the egg whites over it and stir gently until small curds form. Don’t cook it for too long: you want the egg to stay nice and creamy, not dry.

    4. Spoon the scrambled eggs onto a plate, add a spoonful of ricotta on top and finish with some sun-dried tomatoes. Enjoy!

This recipe proves that a failed omelet can sometimes be the most delicious outcome. The egg whites stay lovely and creamy and the ricotta adds a silky touch that completes the dish.
