Tzatziki, I'm so in love with it! Some people only like it on a sandwich, others prefer it with grilled meat, but I also enjoy it on its own. Yes, just with a spoon, and preferably finishing the whole bowl. That I then need half a pack of Stimorol afterwards doesn't bother me at all in moments like that 😉

Tzatziki comes in many forms. Peeling the cucumber, adding mint… That's not for me. For me there is only one real Greek tzatziki and this is it. A good friend of mine is half Greek and he gave me this delicious recipe, which I'm so happy with that I've lost count of how many times I've made it. Oh! One important tip: really squeeze the cucumbers well, otherwise the tzatziki will be too watery and then it's just not as good.

The one and only tzatziki

This classic tzatziki is made with thick Greek yogurt, fresh cucumber and plenty of garlic. Simple, honest and always a hit as a dip or side.

Equipment

  • Coarse grater
  • colander
  • garlic press

Ingredients

  • 500 ml. thick Greek yogurt (I really like the Total one)
  • 1 cucumber
  • 6 garlic cloves
  • pepper & salt
  • good quality olive oil
  • optionally a Kalamata olive and a little oregano for garnish

The one and only tzatziki

    1. Wash the cucumber and grate it using a coarse grater. Put the cucumber in a colander and squeeze it well. Repeat this about 3 times, until not much liquid comes out. Sprinkle the cucumber with sea salt and squeeze once more.

    2. Put the yogurt in a bowl and add the cucumber. Peel the garlic cloves and press them with a garlic press over the yogurt. Mix everything well and season generously with pepper and salt. Add a splash of olive oil and stir well. Taste to see if you like the flavor and add more pepper or salt if needed. Optionally garnish with a little oregano and a Kalamata olive. Enjoy!

Tzatziki is at its best if it gets a little time to sit in the fridge. The flavors of garlic and cucumber then blend nicely through the yogurt. So preferably make it half an hour in advance.

Serve the tzatziki as a dip with bread or vegetables, or as a side with grilled meat. A drizzle of good olive oil and a Kalamata olive complete the presentation.
