Coole kiptaco’s met kool en koriander

It may not be Saturday today, but it’s still time for a new recipe from ZTRDG! Since we’re currently enjoying a lovely late summer, I chose these chicken tacos. Simply because they’re such a delicious summer dish, and because they give a kind of Mexican vibe.

Make sure to start in time to marinate the chicken, that’s when it tastes best. That’s also the 'most work' — the rest is just some chopping, popping it in the oven and, above all, enjoying. Enjoy these delicious tacos!

Cool chicken tacos with cabbage and coriander

Juicy marinated chicken thigh fillets roasted in the oven, served in corn tortillas with a fresh cabbage salad and a creamy smoky sauce. A party on your plate!

Ingredients

  • For the marinated chicken:
  • approx. 800 g chicken thigh fillets
  • 3 tbsp olive oil
  • 4 garlic cloves
  • 1 red chili pepper
  • 4 tbsp coriander
  • 2 tbsp lime juice
  • ½ tsp salt
  • For the rest:
  • ½ red cabbage
  • ½ white cabbage
  • 50 g raisins
  • 2 tbsp mayonnaise
  • 2 tbsp Smokin’ bell pepper sauce
  • salt and pepper
  • 8 Taiyari corn tortillas
  • fresh coriander to garnish

Chicken tacos with cabbage and coriander

    1. Preheat the oven to 180 °C.
    2. Crush the garlic. Remove the seeds from the chili and finely chop it together with the coriander.
    3. Place the chicken thigh fillets in a bowl and mix in the olive oil, garlic, chili, coriander, lime juice and salt. Cover and let marinate in the fridge for at least 2 hours.
    4. Put the marinated chicken in a baking dish and roast for about 30 minutes in the preheated oven.
    5. Meanwhile make a sauce by mixing the mayonnaise with the Smokin’ bell pepper sauce.
    6. Cut the red and white cabbage into fine thin strips, mix with the raisins and one tablespoon of the sauce.
    7. Quickly toast the tortillas on both sides in a dry frying pan until they turn light brown.
    8. Fill the tortillas with the coleslaw, marinated chicken, smoky mayonnaise and garnish with fresh coriander.

These chicken tacos are perfect for a cozy dinner or a relaxed weekend lunch. The combination of the spiced, marinated chicken with the fresh cabbage salad and the smoky sauce creates a delicious whole. Serve the tortillas straight after toasting for the crispiest texture.

Like extra heat? Then add some more red chili to the marinade or the sauce. You can also cut the cabbage a day in advance and keep it in the fridge, so you can get everything on the table quickly on the day. Garnish generously with fresh coriander for a bright finish.
