Yes! Another recipe I get to share with you. This time it’s not my own creation, because this dish comes from food blogger Sabine’s new cookbook ‘Guilty Pleasures’. At her book launch I was already treated to several bites from the book. Especially her signature dish chocolate fudge cake with sea salt was divine. So my expectations for the rest of the recipes in this book were high.

I made the cheeseburger casserole. Beforehand I had my doubts. Wouldn’t it just taste like an ordinary pasta bake? Well, NO! It tastes exactly like a cheeseburger. Only now you have an entire casserole full of it!Winning! Be generous with the pickles and really go all out with the cheddar as a topping, because if you’re choosing a less healthy meal you should go all the way. Enjoy shamelessly indulging!

Cheeseburger casserole from Guilty Pleasures

This cheeseburger casserole combines ground beef, sturdy pasta and creamy cheddar into a delicious guilty pleasure from the oven. Perfect for a weekday evening when you crave something savory and satisfying.

Ingredients

  • 1 red onion
  • 2 cloves of garlic
  • 6 pickles
  • 400 g sturdy pasta
  • 2 tbsp tomato paste
  • 1 tbsp mustard
  • 400 g ground beef
  • salt and pepper
  • 400 g diced tomatoes
  • 150 g cheddar cheese

Cheeseburger casserole

    1. Preheat the oven to 180°C and grease the baking dish.

    2. Finely chop the onion, mince the garlic and cut the pickles and cheddar into cubes. Heat a little olive oil in a frying pan and sauté the garlic and onion until fragrant.

    3. Meanwhile, cook the pasta in another pot according to the package instructions.
    Add the tomato paste and mustard to the garlic and onion and fry for 2 minutes. Then add the minced beef to the pan, season with salt and pepper and cook until crumbly. Finally add the diced tomatoes and let everything simmer for another 5 minutes.

    4. Drain the pasta and stir it together with the pickle cubes into the meat sauce. Pour everything into the baking dish and spread the cheddar over the casserole. Bake the casserole in the middle of the oven for another 15 minutes until the cheese has melted.

This casserole tastes even better if you add the pickles at the last moment so they keep their crunch. Optionally serve with a fresh green salad for a complete meal.

Got veal mince or mixed mince at home? That also works fine in this recipe. You can replace the cheddar with another melting cheese of your choice, like Gouda or mozzarella.
