When you think of carpaccio you probably picture paper-thin slices of meat with arugula, pine nuts, cheese and a pesto or truffle sauce. But did you know carpaccio actually has a different meaning? Carpaccio refers to a cutting technique, just like julienne (thin strips) or brunoise (small cubes). When you cut something 'carpaccio' style it means you slice it very thinly. This can of course be done with meat (hence the name of the dish), but also with things like pineapple or beets, as I did for this delightful summer recipe.

Beets are perfectly suited to be eaten raw. Serve them with soft cheese, something sweet and something with a bit of bite and you get a super flavorful dish. That's exactly what this beet carpaccio is! Be careful when handling the beets: your hands will turn bright pink and stains may not come out of your clothes. So a kitchen apron comes in handy 😉

Beet carpaccio with goat cheese and raspberry dressing

This beet carpaccio is a simple yet impressive dish where thin slices of raw beet are topped with goat cheese, pumpkin seeds and alfalfa. The raspberry dressing with honey gives it a refreshing sweet-tart note.

Ingredients

  • 2 raw beets
  • goat cheese
  • 2 tbsp raspberry vinegar
  • sea salt
  • 1 tbsp pumpkin seeds
  • honey
  • alfalfa

Beet carpaccio with goat cheese and raspberry dressing

    1. Peel the beets and slice them paper-thin using a mandoline (or a sharp knife). Arrange the slices neatly on a plate. You can use as many or as few as you like — the dish is best when you make it to your own taste.

    2. Crumble some goat cheese over the beets, then sprinkle with sea salt. Top with the pumpkin seeds and a drizzle of honey, and finish with a handful of alfalfa. Enjoy!

This dish is lovely as a starter or a light lunch. Use as much or as little of each ingredient as you like, because the beauty of this carpaccio is that you can put it together entirely to your own taste.

Serve the carpaccio immediately after assembling for the best flavor and presentation. The combination of earthy beet, creamy goat cheese and the fresh raspberry dressing makes this dish special every time.
