I am a huge fan of burgers, but live with a husband who is, if possible, an even bigger burger fan. Together with a friend they have a sort of search for the best burger in the Netherlands. So far a restaurant in Arnhem is in first place. So we do have some knowledge of burgers here at home. So I was very curious what my connoisseur would think of the vegetarian beet burger with feta and avocado, which I came across on a blog.

Vegetarian beet burger with feta and avocado

Be positively surprised by this vegetarian beet burger. Earthy and sweet in flavor, the feta and and avocado finish it off.

Ingredients

  • 2 raw beets (about 250 grams)
  • 125 grams of oatmeal
  • 1 small onion
  • 100 grams of feta cheese
  • 1 garlic clove
  • 1 egg
  • 1 tsp olive oil
  • handful of coarsely chopped basil leaves
  • freshly ground pepper and salt
  • 1 avocado
  • 2 tomatoes
  • 2 handfuls of lettuce / arugula
  • quarter cucumber
  • couple of gherkins
  • 4 buns for your burger, e.g. spelt (or make your own gluten-free buns)

Vegetarian beet burger with feta and avocado

    How to make vegetarian beet burgers with feta and avocado?

    1. Peel the beets and grate them in a food processor, along with the onion and garlic.

    2. Put this in a bowl and add the oatmeal, egg and olive oil. Mix this well.

    3. Then crumble in the feta and add the basil leaves. Season evenly with salt and pepper. Then knead the whole thing with your hands. Let stand (refrigerated) for half an hour so that the oatmeal can absorb the moisture from the beets.

    4. Make four burgers from the mixture. Heat some olive oil in a (grill) pan and fry the burgers nice and golden brown on both sides.

    5. Cut the avocado in half and into strips. Top the buns with avocado slices, tomato slices, cucumber slices, pickle and some arugula. Top this with the beet burger.

    6. Serve on a gluten-free bun, for example, with some sweet potato fries.

The recipe did not look too complicated, but I am not a fan of fruit in savory dishes and that is why I left the mango. But actually you can simply add or leave ingredients to your burger that you like. Stack but hit, say! In this recipe I chose to make a nice extensive version. I seg my sandwich with cucumber, tomato, pickle, avocado and arugula. Of course you can omit what you don't like or add some extras, for example the mango that Maura does use in her recipe.

My citizen expert was positively surprised by the beet burgers! He has already eaten them. Because it was already dark for the first time when I made the burgers, I made them once a few days later, and he was all too happy with that! And me too, because it's really a delicious recipe. If you want to eat more low-carb, you can of course also omit the sandwich and make a salad for example. The burger also tastes very tasty!
