Oatmeal is one of my favorite breakfasts and you'll find plenty of breakfast recipes with oatmeal here. But of course there is nothing wrong with a little variation every now and then. This gluten-free rice pudding with coconut milk, apple and cinnamon is a real treat. I saw the recipe for this on a fellow blogger's website. The coconut milk and vanilla marrow make the rice pudding nice and sweet, but not too sweet. In fact, it tastes autumnal and exotic at the same time.

Rice pudding with apple and cinnamon

This is a delicious breakfast that is filling and thus gives the perfect start to the day! Tip: This recipe is also delicious as a dessert! (Just adjust the portions a bit for this)

Ingredients

  • 100 grams of pandan rice or rice of your choice
  • 200 ml water
  • 100 ml canned coconut milk
  • 100 ml vegetable milk, e.g. almond milk or soy milk
  • 1 vanilla pod, marrow scraped out
  • grated zest of 1/2 lemon
  • pinch of coarse sea salt
  • 1 apple
  • small handful of chopped almonds

Rice pudding with apple and cinnamon

    1. Put the water in a pan with the rice and a pinch of sea salt and bring to the kook. Let it simmer for about 15 minutes, until the rice has absorbed all the water.
    2. Then add the coconut milk, the vegetable milk, vanilla energy and the lemon zest. Let it simmer for another 15 minutes.
    3. Meanwhile, peel the apple and cut into cubes. Chop the almonds. Serve the rice pudding with apple and almonds. Enjoy your meal!

Tip: kook A little extra rice a day in advance at your evening meal. That way you only have to add the coconut milk and almond milk; That saves you time again.

In addition to being a top breakfast, you can of course also serve this rice pudding as dessert. I would do this in small portions, because this pudding is really quite filling!
