It's been a while since one of my best friends came over for dinner with me and I was scouring the Internet looking for delicious inspiration. As you may already know by now, I love pumpkin and enjoy making uncommon recipes with it. We all know pumpkin soup, but you can do so much more with pumpkin. This time we are going for a pumpkin lasagna with goat cheese, not too many ingredients and nice and easy to make!

Ingredients

  • 1 bottle pumpkin
  • 500 grams of lean minced meat or vegetarian mince
  • 400 grams of diced tomatoes
  • 40 grams of tomato puree
  • 1 medium onion
  • 120 grams of soft goat cheese
  • 125 ml of crème fraîche
  • 1 clove of garlic
  • 1 tablespoon Italian herbs
  • 1 tablespoon olive oil
  • salt and pepper to taste

How do you make pumpkin lasagna?

    1. Heat the oven to 200 degrees.

    2. Finely chop the onion and garlic.

    3. Heat the skillet with oil and fry the onion and garlic until translucent. Then add the minced meat and fry until loose. Add the diced tomatoes and tomato paste along with salt, pepper and Italian seasoning.

    4. Wash the pumpkin and cut it into as thin slices as possible. You can use a mandolin for this, it makes it easy to make thin slices. You don't need to peel the pumpkin.

    5. Divide the pumpkin slices among the baking dish. Cover with a layer of sauce and finish with the pumpkin. Repeat until you run out of sauce.

    6. Melt the crème fraîche and goat cheese in a pan and spread it over the baking dish and smooth it out.

    7.Bake the pumpkin lasagna in the oven for 40 minutes until golden brown.
