Naan bread with pesto and grilled vegetables is a quick and tasty vegetarian dish, perfect for lunch or dinner. The naan bread is spread with pesto and topped with grilled eggplant, bell bell pepper, red onion and tomato, then garnished with grated cheese. After 10 minutes in the oven, the result is a colorful, pizza-like meal brimming with flavor.

Ingredients

  • 2 naan breads
  • 1 red bell bell pepper
  • 1 eggplant
  • 1 yellow bell bell pepper
  • about 100 grams of pesto (check out a pesto recipe here)
  • 1 tomato
  • half a red onion
  • 2 handfuls of grated cheese

How to make naan bread with pesto and grilled vegetables.

    1. Preheat the oven to 200 degrees.
    2. Cut the eggplant for half and slices over length. Cut the red and yellow peppers into large pieces. Grill the eggplant and pepper in about 8-10 minutes.
    3. Cut the red onion into half rings and cut the tomato into slices.
    4. Spread the naan breads with pesto. Place the eggplant, red pepper and yellow pepper when they are grilled. Finish with the onion and garnish with grated cheese.
    5. Put in the oven (preferably with upper grill) for about 10 minutes until the cheese has melted.
