How fun is it to serve mini pizzas at a birthday or party? And of course not the ones from the freezer, but just make them yourself. I already made a healthy gluten-free pizza and for gluten-free mini pizzas you can just follow that recipe. Possibly halve the amount of flour and then just make mini pizzas. But I also wanted to post a recipe for mini spelt pizza, for when you don't eat gluten-free but do eat wheat-free for example. These mini pizzas will really please everyone, so no hassle with multiple types of bases or flour.

Mini spelt pizza

Once you have the basics, you can then indulge with the toppings. These mini spelt pizzas are a hit at any party!

Ingredients

  • 200 grams of spelt flour
  • 1 tablespoon olive oil
  • generous pinch of salt
  • 1 tablespoon dried basil, oregano and garlic powder (1 of each)
  • 125ml of water
  • 150g passata di pomodori (tomato paste)
  • 50 grams grated goat cheese
  • 2 handfuls arugula

Mini spelt pizza

    1. Preheat the oven to 250 degrees
    2. Add the olive oil and salt to the flour and then stir in the water little by little. If the dough gets too wet, you can always add some extra flour. Because of the flour you can already do some dried herbs, a teaspoon of basil, oregano and garlic powder for example.
    3. Knead the dough well with your hands.
    4. Cover a baking sheet with baking paper. Make small, flat pizza pats from the dough. Make sure the pizza dough is a maximum of 1 cm thick.
    5. Now mix the herbs with the tomato puree and add extra herbs, pepper and salt to taste. Then spread the tomato mixture nice and thick over the mini pizzas. You can do some grated goat cheese on every pizza on every pizza.
    6. Bake in the oven in about 10-15 minutes, until the mini spelled pizzas are nicely golden brown.
    7. Then let them cool slightly and garnish with fresh arugula. Ready to serve!
