Delicious they are, these gluten-free cinnamon cookies with flaxseed. By using rice flour and gluten-free oat flakes, they are totally suitable for people with celiac disease. But also for anyone who just loves a good cookie, these cookies are blissful with tea or coffee. Some of the cookie dough accidentally went into my mouth, oops.

Cinnamon cookies with flaxseed

These cookies are easy to make take little time and tasty for everyone, gluten allergy or intolerance or not. Cup of tea or coffee with them and you can enjoy!

Ingredients

  • 70 grams (wholemeal) rice flour
  • 25 grams of gluten-free oat flakes
  • 2 teaspoons of cinnamon
  • 3 teaspoons flaxseed
  • 5 teaspoons coconut flakes
  • 30 grams of coconut blossom sugar
  • 1/2 teaspoon (tartar) baking powder
  • 1/4 teaspoon baking soda
  • pinch of salt
  • 1 1/2 teaspoon vanilla extract
  • 1 egg
  • 50 grams melted coconut oil

Cinnamon cookies with flaxseed

    1. Preheat the oven to 160 degrees
    2. In a bowl, mix all dry ingredients: rice flour, oat flakes, cinnamon, linseed, coconut grater, coconut blossom sugar, baking powder, baking soda and salt. Then put the vanilla extract, the egg and the melted coconut oil and mix well.
    3. Cover a baking sheet with baking paper and make cakes of cookie dough with a spoon. Make sure there is a lot of space between the cookies, certainly a few centimeters, because they run out considerably.
    4. Then fry for 10 minutes on one side, carefully turn the cookies, and bake for another 5 minutes on the other side. Your gluten -free cookies are ready!
