This is another delicious recipe with not too many ingredients. This plate pie with eggplant is easy on a Sunday, but also quick enough to prepare from work. The combination of eggplant and tomato makes it taste almost a bit Mediterranean. Just bring a little bit of sunshine into the house yourself during the winter months. Nice right ;-)?

Ingredients

  • 2 eggplants
  • fresh dough for savory tart
  • 1 teaspoon oregano
  • 2 tablespoons sundried tomatoes
  • 4 teaspoons tomato paste
  • 1 egg
  • 100 grams of feta cheese

How to make a savory plate pie with eggplant?

    1. Preheat the oven to 200 degrees.
    2. Slice the aubergines and grill them in the oven for about 10-15 minutes. Grilling in the pan is of course also possible.
    3. In the meantime, you turn the sun -dried tomatoes with tomato puree a pasta. Put it in the food processor and grind to a puree.
    4. Place the savory pie dough on baking paper and spread with the tomato paste.
    5. If the aubergines are nicely grilled, divide them over the dough. Crumble the feta over it, the oregano and season with salt and pepper.
    6. Then fold the edges of the dough inwards, approx. 1-2 cm. Beat the egg. Spread the edges of the dough with egg.

The inspiration for this plate cake with eggplant comes from Pauline’s kitchen. She often has easy dishes that taste very tasty. I have adjusted the recipe slightly to my taste. In the recipe of Pauline she first grilles the aubergines in a grill pan. I always find that a job that takes me just too long, so I prefer to use the grill position of our oven. Then you can continue with the rest of the preparations and when you're done, slide the vegetarian plate cake in the oven. Easy Peasy!
