High tea: really a time to enjoy delicious treats. And that certainly works with these gluten-free brownies without refined sugars. They are very easy to make and insanely delicious. I took a large fresh container to work and in no time it was empty, so well liked by all colleagues. Success guaranteed.

Gluten-free brownies

You'll probably want to make this recipe for brownies more often; it's delicious. It also goes perfectly with a high tea.

Ingredients

  • 75 grams of hazelnut flour
  • 75 grams of almond flour
  • 75 grams of rice flour
  • 200 grams medjoul dates (pitted)
  • 200 grams sugar free applesauce
  • 65 grams of fair trade cocoa powder
  • 2 large eggs
  • 2 teaspoons baking powder
  • 1 tablespoon flaxseed
  • 1 teaspoon vanilla extract
  • 40 grams of coarsely chopped nuts (e.g. walnuts or hazelnuts)
  • 175 grams dark chocolate without refined sugar

Gluten-free brownies

    1. Preheat the oven to 180 degrees
    2. Put the dates, linseed and the apple sauce in the food processor and leave it on until it is an even mixture.
    3. Put the hazelnut flour, almond flour and rice flour in a mixing bowl, along with the cocoa powder and baking powder. Add the apple sauce mixture, just like the eggs and vanilla extract and let it mix into a dough in a few minutes.
    4. Grease a brownie form or baking tin of approx. 18x18cm with some coconut oil or olive oil. Pour the mixture into it and divide over the baking tin. Bake in about 30-35 minutes. Allow to cool well.
    5. Melt the chocolate au bain marie and finely chop the nuts. Divide the melted chocolate over the brownies, note: these must have cooled completely. Divide the chopped nuts over the chocolate and let it harden in the fridge. Only cut the brownies into pieces when the chocolate has hardened.
    6. Serve with a nice cup of tea during your gluten -free high tea!
