During my weekend in Sicily, I ate so much in 24 hours: I had to and would taste everything. The dish that really stole my heart was arancini. These are stuffed rice balls with breadcrumbs. The fillings vary, but the ones with risotto in them are my favorite. The risotto balls are deep fried and are therefore not very healthy. In addition, they are not gluten-free by default. But I love to experiment. And so the perfect recipe for gluten-free arancini (or risotto balls) was born.

Gluten-free arancini (risotto balls)

A delicious typical Sicilian dish. Is something different from a bitterball!

Ingredients

  • Approximately 200 grams of risotto
  • mini mozzarella balls
  • 2 eggs
  • about 100 grams of gluten-free flour
  • gluten-free breadcrumbs

Gluten-free arancini (risotto balls)

    How to make gluten-free arancini?

    1. I used leftover risotto from the previous day. Otherwise, make risotto first, e.g. this risotto with pecorino cheese and mushrooms. Let this cool completely.
    2. mouldSmall balls of the risotto, about the size of a small golf ball. Then push in a small ball of mozzarella and fold the risotto around this. Do this until the risotto is finished.
    3. Beat the eggs in a small bowl. Put the gluten-free flour on a plate. Spread the breadcrumbs on another plate.
    4. Then first roll the risotto balls through the gluten-free flour. Then roll them through the egg yolk (do this e.g. with two spoons). Then roll the ball through the breadcrumbs, making sure the breadcrumbs cover the risotto well on all sides. Do this with all the risotto balls.
    5. Drizzle the arancine with a little olive oil. You can also use an olive oil spray if you have one, which is even more convenient.
    6. Preheat the Airfryer (or oven) to 180 degrees and bake the arancine for about 8 minutes until golden brown. Serve the arancine warm, enjoy!

Arancini is a typical Sicilian dish. The Sicilians also love it; In Palermo you will even find a special store that only sells Arancini in dozens of different flavors. If you just googled "Arancini Palermo" you even see that there are whole overviews with "the best Arancini in Palermo". Great, that passion for food! Traditionally, the balls are filled with risotto and ragout or mozzarella, but as said there are a lot of variations.

As I indicated, Arancine are not normally gluten -free. The risotto balls are rolled into flour, then in a beaten egg and finally you roll them through some breadcrumbs. By using gluten -free flour and gluten -free breadcrumbs (and of course a gluten -free risottorecept), you make gluten -free arancine. In addition, I did not freed them, but prepared them in the Airfryer. That is a lot healthier again!
