Perfect for a quiet Sunday afternoon, in between work or simply as an easy lunch with an Italian twist.

  • Sandwich toaster
  • Knife and cutting board
  • Spoon (for the pesto)
  • Brush or sandwich knife (for applying olive oil or butter)

Ingredients

  • 1 piece flatbread
  • 2 tbsp green pesto
  • ½ mozzarella ball, thinly sliced
  • ½ tomato, thinly sliced
  • Fresh basil (optional)
  • 1 tsp olive oil or butter for brushing the outside
  • Salt and pepper to taste

Flatbread toast with pesto, tomato & mozzarella

    1. Preheat your sandwich maker.
    2. Thinly slice the mozzarella and tomato.
    3. Spread one side of the flatbread with pesto.
    4. Top with the tomato and mozzarella slices.
    5. Season with a little salt and pepper.
    6. Add some fresh basil for extra flavor, if desired.
    7. Fold the flatbread in half (or place a second one on top if they are small).
    8. Thinly brush the outside with olive oil or butter, this will make it golden brown.
    9. Place the sandwich in the sandwich maker.
    10. Cook for 4–5 minutes, until the outside is crispy and the cheese is melted.
    11. Remove the sandwich and let it cool for 1 minute.
    12. Cut into wedges or halves.
    13. Enjoy!
