These gluten-free chocolate muffins with banana are free of refined sugar and dairy. They're still sweet because of the banana and date, but it's definitely not a mole-sweet muffin. I got the inspiration for this recipe from a fellow blogger.

Chocolate muffins with banana

These gluten, sugar and dairy-free muffins are the perfect snack. These muffins are a delicious combination of flavors!

Ingredients

  • 200 grams of rice flour
  • 50 grams almond flour
  • 2 ripe bananas
  • 2 eggs
  • 100 grams of medjoul dates (pitted)
  • 150 ml almond milk
  • 25 grams of coconut oil
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 30 grams of cocoa powder
  • 10 grams of cacao nibs
  • 20 grams of coconut blossom sugar (or a dash of honey or maple syrup)

Chocolate muffins with banana

    1. Preheat the oven to 180 degrees
    2. Put the bananas and pitted dates in the food processor and mix until a mixture.
    3. Mix all dry ingredients in a bowl: rice flour, almond flour, baking powder, cocoa powder, cocoonibs, coconut blossom sugar.
    4. Beat the eggs, together with the almond milk, melted coconut oil and vanilla extract.
    5. Then add the dry ingredients and the banana mixture to the egg mixture and let the food processor mix the dough, or do it with a whisk or fork.
    6. Divide the mixture into about 10 muffin tins and bake nicely in about 30-35 minutes.
