Zoete aardappel brownies met nootjes

Do you know that feeling? Around 4:00 PM it starts to tingle a bit and you fancy something tasty with your coffee or tea. I'm not a cookie monster and I don't keep unhealthy snacks at home, but you can wake me up for chocolate! When I want to treat myself to something nice I have one condition. My motto is “If you're craving something delicious, you should do a little work for it.”

Most of us are familiar with the sweet potato by now. For example, you can make a delicious stamppot or tasty oven fries. But did you know you can also use it in a treat for coffee or tea? I was pleasantly surprised when I was looking for a brownie recipe and came across this tasty version from Powerfood 2 by Rens Kroes made with sweet potato.

Sweet potato brownies with nuts

These sweet potato brownies are a delicious and healthy treat. With dates, hazelnuts and raw cacao you make a naturally sweet brownie without refined sugars.

Ingredients

  • 2 sweet potatoes (approx. 400 g)
  • Coconut oil for greasing
  • 60 g raw hazelnuts
  • 40 g buckwheat or spelt flour
  • 6 tbsp raw cacao
  • 1/2 tsp ground ginger
  • 1/2 tsp vanilla powder (unsweetened)
  • 1 tsp ground cinnamon
  • pinch of sea salt
  • 160 g pitted dates
  • 2 handfuls raw walnuts
  • 3 tbsp maple syrup

Sweet potato brownies with nuts

    1. Preheat the oven to 180°C. Peel the sweet potatoes and slice them thinly. Grease the baking dish with the coconut oil and place the sweet potato slices in it, brushing them with the coconut oil. Put the baking dish in the oven for 20 minutes until they are soft. When the potatoes are done, take them out of the oven and let them cool. Leave the oven set to 180°C.

    2. Put the hazelnuts in the blender and grind them finely. Then transfer the finely ground hazelnuts to a bowl and add 5 tablespoons of cacao and all the other dry ingredients.

    3. Purée the sweet potato in the blender. Chop the dates into small pieces and add them to the potatoes, then blend until a smooth mixture forms. Fold this mixture into the flour mixture and mix everything well until a smooth dough forms.

    4. Chop the walnuts and add half of them to the dough, stirring them through.

    5. Line the baking dish with parchment paper and spoon the dough into it. Smooth the top with your spatula. Place the baking dish in the oven for 30 minutes. Pierce the brownie with a skewer to check if it's done. If nothing sticks to the skewer, the brownie is ready and you can remove the dish from the oven. Let the brownie cool for 10 minutes.

    6. Make the topping by mixing 1 tablespoon of cacao with the maple syrup and a pinch of salt. Spread the chocolate topping over the brownie and sprinkle the remaining chopped walnuts on top.

    7. Cut the brownie into pieces and enjoy!

These brownies are perfect as a healthy snack or as a dessert. Store them in an airtight container in the fridge and they'll keep for at least three days. They often taste even better the next day!
