Ingredients

  • 600 g watermelon (without rind, in cubes)
  • 80 ml Aperol
  • 2 tbsp lemon juice (freshly squeezed)
  • 2 tbsp simple syrup
  • 200 ml cold prosecco
  • Fresh mint or watermelon slices (for garnish)
  • Ice cubes to taste

How to make a Watermelon Aperol Spritz Slush?

    1. Cut the watermelon into cubes and remove any seeds. Spread the cubes out on a baking sheet and place them in the freezer for at least 2 hours until thoroughly frozen.
    2. Put the frozen watermelon cubes in a blender and add the Aperol, the lemon juice and the simple syrup. Blend at high speed until you have a smooth slush.
    3. Taste the mixture and, if needed, add a little extra simple syrup or lemon juice to your liking.
    4. Divide the slush mixture among the glasses. Fill each glass about two thirds full and leave room for the prosecco.
    5. Carefully pour cold prosecco over the slush. Do this slowly so the bubbles remain intact.
    6. Garnish each glass with a slice of watermelon or a sprig of fresh mint. Serve immediately and enjoy.
