Pour the apple cider into a saucepan and place it over medium heat.
Add the cinnamon sticks, star anise, cloves and the orange peels to the pan.
Warm everything over low to medium heat for 15 minutes. Do not let it boil so the flavors stay intact.
Add the orange juice and the honey and stir well. Taste and add more honey if desired.
Strain the cider through a fine-mesh sieve to remove the spices.
Pour the warm apple cider into mugs and optionally garnish with a fresh cinnamon stick or an orange slice. Serve immediately and enjoy.
