This Eton Mess was born out of necessity and turned out to be a big hit. One Sunday I had friends coming for dinner and I’d planned a whole spread: rib roast, steak tartare, grilled asparagus, zucchini. Delicious, of course, but also pretty time‑consuming. While I was nearly at the checkout the word ‘dessert’ suddenly flashed through my mind. Shit! I hadn’t thought of that yet. Serving something out of a cup wasn’t an option for me, but I also didn’t have time to assemble a very complicated dessert. I realised I fancied Eton Mess, but the oven was needed for the rib roast so I couldn’t make meringues myself. Lucky it was almost Easter — the shops were full of eggs, chocolate bunnies and: little meringues! Into the basket they went, along with some cream, fruit and Oreo cookies. Those last ones aren’t officially traditional, of course, but they sounded good. And they were! So here it is, for you too: the super‑quick Eton Mess with Oreo.

Quick Eton Mess with Oreo

This quick Eton Mess with Oreo is a delightful no‑bake dessert of airy whipped cream, fresh fruit, crunchy meringues and crushed Oreo cookies. Perfect when you want to put something impressive on the table in no time.

Ingredients

  • 500 ml whipped cream
  • a spoonful of sugar
  • bag of meringues (egg‑white meringues)
  • punnet of fresh strawberries
  • punnet of fresh raspberries
  • 1 Oreo cookie per person

Quick Eton Mess with Oreo

    Whip the cream with a spoonful of sugar until soft peaks form. Wash the strawberries and raspberries and cut the strawberries into quarters. Spoon a dollop of cream into each dish and arrange the fruit on top. Crumble the meringues and scatter them over the dishes as well. Finally, crumble the Oreo cookies and finish the dessert with them. Enjoy!

This dessert is ideal to make when you have little time but still want to impress. The combination of creamy whipped cream, bright summer fruit and crunchy meringues creates a lovely play of textures and flavours.

Serve the Eton Mess immediately after assembling so the meringues and Oreo crumbs stay nice and crisp. You can also vary it with other seasonal fruit of your choice.
