My colleague Breght came up with this delicious, super-easy Italian dish.
Few ingredients, not too much fuss: just how a lovely Italian pasta (& salad) should be. And on the table within 10 minutes!

Simple, quick and super tasty: Sage pasta

This sage pasta is on the table in no time and packs plenty of flavor thanks to garlic, chili flakes and creamy feta. Served with a fresh lamb's lettuce, it makes a complete meal.

  • Pan with lid
  • frying pan or skillet
  • optional: kettle (to get the pasta water boiling faster)

Ingredients

  • Ingredients for the pasta:
  • 2 handfuls of sage
  • pasta of your choice (I chose whole wheat spaghetti)
  • olive oil
  • small knob of butter
  • 1/3 jar of sun-dried tomatoes
  • 1 tsp chili flakes
  • garlic (use as many cloves as you like; can be quite spicy)
  • 1 pack of feta
  • Ingredients for the salad:
  • lamb's lettuce
  • a few sun-dried tomatoes
  • Kalamata olives
  • red onion
  • olive oil
  • balsamic vinegar
  • pepper & salt

Simple, quick and super tasty: Sage pasta

    1. Cook the pasta al dente. Wash and dry the sage, then chop it finely. Cut the sun-dried tomatoes and garlic into pieces. Put the butter and oil in the pan. Add the sage, chili flakes and tomatoes to the pan. Sear briefly over high heat, then turn the heat down and make the salad.

    2. Slice the red onion into rings and spread these, together with the olives and tomatoes, over the lamb's lettuce. Season with pepper, salt and a generous drizzle of olive oil.

    3. By now the pasta and the sauce should be ready. Stir the pasta into the sauce, let it heat through briefly and serve with the salad.

    Enjoy!

This recipe is perfect for a busy midweek evening. You prepare the sauce while the pasta cooks, so everything is ready at the same time. Adjust the amount of garlic and chili flakes to your personal taste.

Serve the pasta immediately after plating so the sage stays nicely crispy. The fresh lamb's lettuce with balsamic vinegar provides a lovely contrast to the savory, herbaceous pasta.
