This recipe is an old-school hand-me-down. I first had it about 12 years ago at a high-school friend's house. I took the recipe home where my mother made it and then passed it on to her sisters. I didn't eat it for years, until a friend recently asked me what tasty and healthy thing she could make so the kids would enjoy it. This dish came to mind. I remembered roughly what went into it and set about making my own version of the hand-me-down recipe 'chicken on the sofa'.

Creamy Chicken Broccoli Casserole

This creamy chicken broccoli casserole is a delicious, complete weeknight meal. With juicy chicken breast, tender-crisp broccoli florets, mushrooms and a silky ragout-crème fraîche sauce, topped with breadcrumbs and Parmesan cheese.

Ingredients

  • 400 g (Organic) chicken breast | 2 heads of broccoli
  • a container of mushrooms
  • can of chicken ragout
  • clove of garlic
  • curry powder
  • pepper & salt
  • saffron (powder)
  • 125 ml crème fraîche
  • Parmesan cheese
  • breadcrumbs
  • olive oil
  • brown rice

Creamy Chicken Broccoli Casserole

    1. Preheat the oven and cut the chicken breast into cubes. Wash the broccoli and clean the mushrooms. Cut the broccoli into florets and quarter or halve the mushrooms.

    2. Steam (or boil) the broccoli until the florets are tender-crisp. When you're done with this pan you can cook the rice in it (efficiency serves us 😉 ).

    3. Crush the garlic, heat olive oil in a frying pan and briefly sauté the garlic. Add the chicken pieces and season with pepper, salt and the saffron powder. This spice gives the dish a 'warm' flavor and a nice yellowish color. Fry the mushrooms briefly until cooked (they don't need as long as the chicken, so add them a bit later).

    4. In a small bowl, mix the ragout with the crème fraîche and stir in a generous amount of curry powder. You can also add some pepper and salt if you like.

    5. Okay, now fill the baking dish! Start with the broccoli, then add the chicken with mushrooms and then the ragout mixture. Sprinkle a little breadcrumbs over it and finish with a thin layer of cheese.

    6. Now the dish goes in the oven for about 20 minutes. Serve the dish with rice, enjoy!

This dish is perfect for a weeknight when you want to put something savory and nutritious on the table without spending hours in the kitchen. The combination of saffron and curry gives the casserole a warm, aromatic flavor that makes the dish a bit special.

Serve the casserole with brown rice for a complete meal. Have leftovers? The dish is also delicious reheated for lunch the next day. You can replace the mushrooms with other vegetables if you prefer.
