Equipment

  • Toaster or grill pan
  • Small bowl
  • Fork
  • Cutting board
  • Sharp knife

Ingredients

  • 4 slices sturdy bread (e.g., sourdough or whole grain)
  • 250 g ricotta
  • 4 fresh figs
  • 40 g walnuts, coarsely chopped
  • 2 tbsp runny honey
  • 1 tsp lemon juice
  • Pinch of salt

How to make ricotta toast with honey, walnuts and fresh figs?

    1. Toast the slices of bread until golden brown and crisp in your toaster or in a grill pan over medium heat.
    2. Stir the ricotta with a fork to loosen it and add a pinch of salt and a small splash of lemon juice. This gives the ricotta a bit more brightness.
    3. Spread a generous layer of ricotta on each toasted slice of bread.
    4. Cut the figs into quarters or thin slices and arrange them over the ricotta.
    5. Scatter the coarsely chopped walnuts on top for a nice crunchy contrast.
    6. Finally, drizzle a tablespoon of honey over each toast. Serve immediately and enjoy.

No fresh figs on hand? Use dried figs, pear slices or a handful of blueberries. The combination of creamy ricotta with sweet fruit and a bit of crunch always works. That way you can have a different breakfast each morning with the same basic recipe.

A good grill pan makes the difference: it gives your bread those lovely grill marks and an extra smoky edge that an ordinary toaster can't achieve. Invest in quality that will last you every morning.
