This pistachio pesto with mint is a fresh take on classic green pesto. Delicious on toast or bread, and also excellent with chicken or lamb.

Ingredients

  • Leaves from 1 bunch of mint
  • Bunch of flat-leaf parsley
  • 75 grams chopped pistachios
  • 2 cloves of garlic
  • 100 grams Parmesan cheese, in chunks
  • Olive oil
  • Salt and pepper to taste

Pistachio pesto with mint

    Like its well-known green pesto cousin, this tapenade is easy to make and ready in no time. Finely chop the pistachios in a chopper—or if you don't have one, use your blender or food processor. Remove the chopped pistachios and set them aside. Put all the ingredients in the chopper and puree and pulse until the tapenade is smooth and a beautiful green. Use enough olive oil to make the tapenade silky.

    Serve this delicious pistachio-mint tapenade on toast or bread, but it's also great with chicken or lamb.

Store the pistachio pesto in a clean jar in the refrigerator. Cover the surface with a layer of olive oil so the pesto stays nicely green. This way you can keep it for up to a week.

Serve this tapenade on toasted bread or crostini as an appetizer, or use it as a sauce for grilled chicken or lamb chops for an elegant meal.
