Piadina is an Italian flatbread you don't have to travel all the way to Italy for: it's simply available at the appie. You don't need many other ingredients either, so this is a perfect lunch when you don't want to fuss but do want a reaaaaally tasty Italian "sandwich" =)

Piadina is an Italian flatbread that you can fill in no time with mozzarella, Parma ham, grilled pepper and fresh arugula. A simple but tasty meal you can have on the table in minutes.

Ingredients

  • 2 piadine
  • 1 ball mozzarella or burrata
  • 4 slices Parma ham
  • 1 grilled red pepper
  • A handful of arugula
  • 2 tablespoons grated Parmesan cheese
  • Freshly ground pepper and fine sea salt

Piadina: Italian flatbread with Parma ham, mozzarella and grilled pepper

    1. Heat a frying pan without oil or butter over medium heat and warm both piadine for 2 minutes on each side.

    2. Slice the mozzarella into thin rounds and cover one half of the piadina with them. Scatter a handful of arugula on top. Lay 2 slices of Parma ham over the arugula. Cut the grilled pepper into thin strips and place on the ham. Sprinkle a tablespoon of grated Parmesan over the filling and finish with some freshly ground pepper and fine sea salt. Fold the piadina closed and cut it in half. Buon appetito!

Piadina is a classic flatbread from the Emilia-Romagna region of Italy. It's traditionally cooked in a dry frying pan, which makes it slightly crispy on the outside and soft on the inside. Because of the short cooking time, this recipe is ideal for a quick lunch or a light evening meal.

Vary the filling to your taste: replace the Parma ham with prosciutto crudo or bresaola, or use burrata instead of mozzarella for an extra creamy result. A dry frying pan or grill pan is all you need to prepare this dish.
