Chorizo, chorizo, chorizo — yes, I made this recipe because I'm a big fan of chorizo. It's the flavor of the sausage that does it for me. I also had some goat cheese, a container of cherry tomatoes and a bag of arugula in my fridge that really needed to be used up. I got my inspiration from a dish a friend once made for me. All I can say now is: 'You have to try this!'.

Pappardelle with chorizo and goat cheese is a simple and tasty one-pan meal. The combination of spicy chorizo, fresh cherry tomatoes, pesto rosso and creamy goat cheese makes this dish highly recommended.

Ingredients

  • 250 g pappardelle
  • 250 g chorizo
  • 1 onion
  • 500 g cherry tomatoes
  • 50 g pesto rosso
  • 125 g goat cheese
  • 75 g arugula
  • salt & pepper

Pappardelle with chorizo and goat cheese

    1. Chop the onion finely and sauté it in the pan. Stir regularly and add the chorizo cut into pieces. The chorizo releases a lot of fat; pour off a little so the dish is less greasy.

    2. Meanwhile, cook the pappardelle according to the package instructions.

    3. Quarter the cherry tomatoes and add them to the onion and chorizo. Once the pappardelle are ready, combine everything into a one-pan dish. Add about 50 g pesto rosso, half a packet of goat cheese and the arugula and stir everything together. Season with salt and pepper to taste. Put the remaining goat cheese and arugula on the table so everyone can add them to taste.

This dish is very easy to adapt to your own taste. Want it a bit spicier? Add a pinch of chili flakes. Don't like arugula? You can also use spinach as the leafy addition.

Put the extra goat cheese and arugula on the table so everyone can finish their own plate. That makes this dish perfect for a relaxed, sociable meal with family or friends.
