  • Cling film or tea towel
  • Pastry board
  • Rolling pin

Ingredients

  • 500 grams flour
  • 325 ml lukewarm water
  • 7 grams dried yeast
  • 10 grams salt
  • 1 tablespoon olive oil

How to make no-stress pizza dough without kneading?

    1. Mix all the ingredients in a bowl until you have a rough, sticky mass. Do not knead.

    2. Cover and leave to rest for 15 minutes.

    3. Fold the dough over itself once (no kneading — just folding).

    4. Cover and refrigerate for 12 to 18 hours.

    5. Divide into 4 portions, shape into balls, and leave at room temperature for 1 hour before use.

The secret to this dough is time, not elbow grease. By letting the dough rise slowly in the fridge, the gluten structure develops all on its own. You end up with a dough that rolls out smoothly and bakes up beautifully crisp. A sturdy pastry board is essential for that: it keeps everything in place while you stretch out the bases, without anything slipping or sliding.

Making the dough for a bigger crowd? Simply double the quantities and divide the dough into more balls. The dough keeps well in the fridge for up to two days, or you can freeze the balls for next time. That way you always have fresh pizza bases within easy reach.
