You probably already knew you can easily make mayonnaise yourself, but did you also know it only takes a few minutes? In most mayo recipes you'll read that you must add the oil very carefully, drop by drop, otherwise it will go wrong. When I came across this recipe where you make mayonnaise within a minute using an immersion blender I didn't have much faith either. But it works perfectly!

Mega easy mayonnaise

With just a handful of ingredients you can quickly make your own creamy mayonnaise. Ready in a minute and easy to vary with garlic, saffron or whisky.

  • Tall measuring jug
  • Immersion blender

Ingredients

  • 1 egg yolk
  • 1 tbsp mustard
  • juice of (slightly less than) half a lemon
  • pepper & salt
  • 250 ml oil of your choice (I used rapeseed oil, but olive, peanut or sunflower oil also work)

Mega easy mayonnaise

    1. Put the yolk, mustard, lemon juice and finally the oil into the measuring jug and place the immersion blender in. Turn it on, blend for a minute and tadaa… Mayo! Now season with pepper & salt and serve immediately.

    2. In the fridge the mayonnaise will keep for 3 days (cover well). Want to make a special mayo? For aioli, mix in a squeezed clove of garlic and a pinch of saffron at the end. For a delicious whisky cocktail sauce add a teaspoon of tomato paste, some Tabasco and a capful of whisky to the basic mayo.

This homemade mayonnaise will keep in the fridge for up to 3 days. Cover the measuring jug or a clean jar well so the mayo stays fresh. Use it as a dip, sandwich spread or as a base for other sauces.

Want to vary? Add a squeezed clove of garlic and a pinch of saffron at the end for aioli, or make a whisky cocktail sauce by mixing a teaspoon of tomato paste, some Tabasco and a capful of whisky into the base mayo.
