I got a little peckish and, yes, felt like cooking! I realized I still had some fresh ingredients lying around and got to work. With the lovely ‘soul cuisine’ Spotify playlist on, I wasin no timedone, had a delicious meal on the table and an extra portion in the fridge for tomorrow's lunch. I'm back in the groove!

Easy & quick: whole-wheat pasta with tuna in tomato sauce

This whole-wheat pasta with tuna in tomato sauce is an easy and quick weekday dish. With a handful of fresh vegetables, anchovies and a can of peeled tomatoes you can have a tasty meal on the table in about fifteen minutes.

Ingredients

  • 150 g whole-wheat penne
  • 1 sweet pointed pepper
  • 1/2 red chili
  • 1 clove garlic
  • 1/2 red onion
  • 2 spring onions
  • 1 can peeled tomatoes
  • 1 can tuna in water
  • half a tin of anchovies
  • Good olive oil
  • salt and freshly ground pepper
  • 1 tsp oregano

Whole-wheat pasta with tuna in tomato sauce

    1. First, bring plenty of water to a boil in a pot and cook the pasta until done. I always find it easiest to chop everything beforehand so you can set it out in bowls and add it to the pan when needed.

    2. Finely chop the onion, mince the garlic and the chili, slice the spring onion into rings and cut the bell pepper and anchovies into pieces. Heat some olive oil in the pan and sauté the red onion. Then add the garlic and chili, and after a minute add the bell pepper and spring onion. Fry for a few minutes and then add the tomato sauce. Scoop some tuna into two small bowls and make your cats happy 😉 Or if you don't have cats: put all the tuna in the pan, along with the anchovies. Season with salt, freshly ground pepper and oregano (always taste to see if it needs a bit more of anything) and let simmer over low heat. It only needs a few minutes, but longer is fine.

    3. Serve the pasta with the sauce on top and grate some Parmesan over it if you like. Enjoy!

This dish is delicious as is, but you can also grate some fresh Parmesan over it for an extra savory touch. Preferably use a good olive oil for the best flavor.

Have leftover tuna? Store it in a sealed container in the fridge and use it the next day in a salad or on a sandwich. That way you waste nothing!
