Yes! I finally have my spiralizer! You might wonder why I'm so happy, but I think you'll be too once you see this top gadget. And a spiralizer can… *drumroll*… make vegetable spaghetti! It's like a big pencil sharpener with one side for thin, and one side for slightly thicker strands. It works the same as a pencil sharpener: you put the vegetables in, turn it around and the strands come out. There's also something to protect your fingers—a little cap with spikes you can put on the end of the vegetable. That's especially handy with beets since they're quite small =)

With a spiralizer you can turn cucumber, carrot and beet into colorful vegetable strands. A fresh yogurt-lemon dressing and crunchy pumpkin seeds complete this dish.

  • 1/2 cucumber
  • 1 carrot
  • 2 large pre-cooked beets
  • 3 tbsp yogurt
  • 1 tbsp olive oil
  • juice of 1/2 lemon
  • salt & pepper
  • a handful of pumpkin seeds

Colorful vegetable spaghetti with yogurt-lemon dressing

    Wash the cucumber and peel the carrot. Use the spiralizer to make strands from all the vegetables and mix them together. In a small bowl, whisk the yogurt with the oil, lemon juice and season with salt and pepper. Serve the spaghetti with a few spoonfuls of the dressing and some pumpkin seeds on top. Enjoy!

This dish is lovely as a light lunch or as a fresh side. The combination of raw vegetables and the creamy dressing creates a nice balance between bright and savory.
