On Sundays we often sit with friends. A nice drink, a bit of chatting and not being too active, because after all, it is Sunday 😉 Recently a friend and I decided to make the guys happy by preparing some delicious chicken drumsticks. A real winner for Sunday, since it’s mostly just a bit of chopping and then putting everything in the pan.

So you can relax on the couch and wait for this delicious dish to be ready. These drumsticks are also perfect to prepare in the morning if you have a busy afternoon ahead.

Chicken drumsticks in Italian tomato sauce

Chicken drumsticks slowly cooked in a flavourful sauce of tomatoes, red wine, fresh vegetables and parsley. A simple yet tasty dish that pairs beautifully with pasta or grilled vegetables.

Ingredients

  • 500 g chicken drumsticks
  • 400 g peeled canned tomatoes
  • 2 red onions
  • 300 g peeled carrots
  • 2 stalks of celery
  • 1 small can of tomato paste
  • a handful of fresh parsley
  • 100 ml red wine
  • 2 garlic cloves
  • olive oil
  • a knob of butter

Chicken drumsticks in Italian tomato sauce

    1. Heat the oil in the pan and brown the chicken drumsticks for about 10 minutes. Make sure to turn them regularly. After 10 minutes, remove the chicken with tongs and set aside.

    2. Crush the garlic, finely chop the red onion and parsley, and roughly chop the carrot and celery. Melt the butter in the same pan the chicken just came out of (don’t rinse it — you want to keep the flavours) and sauté the onion until translucent. Add the garlic, cook for a minute, then add the carrot and celery. Cook for about 10 minutes, stirring occasionally. Now add the canned tomatoes (including their juice), the tomato paste, the wine and the parsley. Stir and bring to the boil.

    3. Place the drumsticks back in the pan, put the lid on and let everything simmer on medium heat for at least 45 minutes. The flavours will soak into the chicken. Since you’ll also end up with a very tasty sauce, this dish is ideal to serve with cooked pasta and, for example, some grilled vegetables (or a nice salad). Enjoy!

This dish is ideal to let gently simmer on the stove while you get on with other things. The longer the chicken sits in the sauce, the more flavour it absorbs. Feel free to give it extra time if you have it.

The leftover tomato sauce is delicious over cooked pasta or as a base for another meal. Store leftovers in an airtight container in the fridge and use within two days.
