My friend Nicky is just as much of afoodloveras I am. Plans with our group of friends are always made including food (&drinks) and we also love being in the kitchen together. Nick often comes up with the tastiest dishes and is thequeenof healthy – and mega tasty – party snacks.


On the phone we were talking about how we were both going to eat wraps. I with chili con carne inside (coming online soon) and she with turkey and endive.Say what?!What an unusual combination, but it sounded oh so tasty. When she sent the photos and told me how insanely good it tasted I was sold: you all have to see this recipe. Now this one wasn’t invented by her: the recipe comes from ah.nl. But that absolutely doesn’t make it any less delicious. Oh, Nick of course did put her own spin on it, so turkey wraps are just a little different from the original =)

Turkey wraps with endive

These turkey wraps are quick, flavorful and satisfyingly filling. With chorizo, bell pepper and Greek yogurt you can put a complete meal on the table in no time.

Ingredients

  • 100 g chorizo (or salami), diced
  • 300 g turkey breast, cut into strips
  • 1 large onion, finely chopped
  • 1 red bell pepper, diced
  • 1 tablespoon spicy smoked paprika
  • 4 large tomatoes
  • 4 tortilla wraps
  • 150 g Greek yogurt
  • 1 bag of endive (250 g)

Turkey wraps with endive

    Start by chopping and preparing all the ingredients. Heat the sauté pan and fry the chorizo in it.

    Then add the turkey, onion and bell pepper and stir-fry everything for about 5 minutes – until the turkey is cooked through. Sprinkle the paprika powder over it and add some salt and pepper to taste if you like.

    Dice the tomatoes and add them. Make sure the juicy insides of the tomatoes go into the pan too; that makes it nicely saucy.

    Warm the tortillas and spread them with Greek yogurt. Scatter some raw endive over them and then spoon in some of the turkey mixture. You can fold the wraps closed or eat them like a sort of pizza. Enjoy!

Prefer a milder flavor? Replace the chorizo with salami and choose a mild paprika powder. The raw endive adds a lovely crunch and a fresh contrast to the warm turkey mixture.

These wraps can also be made with leftover cooked turkey. In that case, add the turkey only at the end so the meat doesn’t dry out. Serve immediately after folding for the best experience.
