A good hotdog doesn't have to come from a street stall. Making it yourself is easier than you think, and the result is so much better. The secret is the sauerkraut: briefly fried in a hot pan until it's deliciously crispy and its sharp acidity softens a bit. For that you need a good cookware set, because a pan that distributes heat well really makes the difference. This recipe is no-nonsense, tasty and ready in less than twenty minutes.

  • Wooden spatula
  • Paper towels
  • Bread knife
  • Tongs

Ingredients

  • 4 hot dog sausages
  • 4 hot dog buns
  • 250 g sauerkraut (drained)
  • 1 tbsp sunflower oil
  • 1 tbsp butter
  • 1 tsp caraway seeds
  • 1 tsp sugar
  • Black pepper to taste
  • 2 tbsp coarse mustard
  • 2 tbsp mayonnaise
  • 1 small red onion, finely chopped (optional)
  • Sriracha or American mustard to taste (optional)

How to make a hotdog with crispy sauerkraut?

    1. Pat the sauerkraut dry with paper towels. The drier the sauerkraut, the crispier the final result.
    2. Heat a splash of oil in a frying pan over medium heat. Add the sauerkraut and fry for 8 to 10 minutes, stirring occasionally, until golden brown and crispy. Season with pepper, a pinch of caraway seeds and, if you like, a little sugar to balance the acidity.
    3. Warm the sausages at the same time in another pan with a little water. Let the water evaporate and then briefly brown the sausages in some butter until lightly golden.
    4. Slice the hot dog buns along the top and toast them briefly in a dry pan or under the grill until slightly crisp.
    5. Spread a thin layer of mustard and, if desired, some mayonnaise on the inside of the buns.
    6. Place a sausage in each bun and spoon plenty of crispy sauerkraut over it.
    7. Garnish to taste with finely chopped red onion, a drizzle of sriracha or American mustard. Serve immediately.

This recipe proves that with a few simple ingredients and a good pan you can put something special on the table. The crispy sauerkraut is the star of the dish: sour, savory and with just enough bite to make every mouthful interesting. Make a big panful and let everyone assemble their own hotdog. That's real enjoyment together.

A pan that distributes heat well and has a non-stick surface makes frying crispy sauerkraut much easier. You want the sauerkraut to dry-fry quickly without sticking. With the right cookware set in your kitchen, you can make this dish without fuss, every time.
