Long live the recipe cards from Plus where I came across a delicious surimi pasta. I made a few tweaks and the result was so quick, easy and mega tasty that I’d love to share it with you!

Delicious, quick pasta | Surimi and roasted tomatoes

A quick and flavourful pasta with surimi flakes, roasted cherry tomatoes and fresh arugula. Perfect for a weeknight when you have little time but still want something tasty.

  • Frying pan or skillet
  • grill pan (or alternatively a small frying pan)
  • saucepan

Ingredients

  • (Spelt) pasta
  • surimi flakes
  • 1/2 onion
  • red chili
  • lemon
  • fresh parsley
  • cherry tomatoes (preferably on the vine)
  • arugula
  • olive oil
  • salt & pepper

Delicious, quick pasta | Surimi and roasted tomatoes

    1. Cook the pasta al dente in plenty of salted water. Finely chop the onion and parsley. Remove the seeds from the chili and slice it into rings. Heat some oil in a pan and sauté the onion. At the same time, pour a good layer of olive oil into a grill pan and season with salt and pepper. Place the tomatoes on the vine on top. The bottoms of the tomatoes will open up and absorb the oil, salt and pepper. And that makes them reeeally delicious =) (I learned this trick from a chef friend).

    2. Add the chili and surimi flakes to the pan with the onion and warm through. By now about 10 minutes should have passed and your pasta and tomatoes should be ready. Divide the pasta between plates, spoon the surimi mixture over it and top with a handful of arugula, place a vine of tomatoes on top and sprinkle with some fresh parsley. Serve with a wedge of lemon to squeeze over.

    We ate this pasta with tomato, mozzarella and basil. Enjoy!

The trick with the tomatoes in the grill pan is the star of this dish. Roasting them in a layer of olive oil with salt and pepper gives them a deep, rich flavour that lifts the whole pasta to the next level.

Serve with a wedge of lemon to squeeze over the pasta for a fresh, light touch. Lovely paired with a salad of tomato, mozzarella and basil.
