You’ve probably misjudged the amount of rice you cook now and then and ended up with the pot still half full afterwards. It happens to me regularly 😉 Since I don’t like wasting food, I always keep whatever is left and come up with something tasty to do with it. I think everyone once had rice with butter, cinnamon and sugar as a kid. I loved that! Nowadays I lean a bit more towards the healthy side, but this lovely breakfast is loosely based on that old dish.

Delicious breakfast with rice, banana and walnuts

This delicious breakfast combines cooked brown rice with sweet banana, raisins and crunchy walnuts. Warm or cold, it's a nutritious way to start the day.

Ingredients

  • 6 heaping tbsp cooked brown rice
  • a pat of butter
  • 1/2 banana
  • 1 tbsp raisins
  • 1 tbsp chia seeds
  • 1 tbsp walnuts
  • 1 tbsp maple syrup

Delicious breakfast with rice, banana and walnuts

    You can eat this breakfast warm or cold. Spoon the rice onto a small plate, place a pat of butter on top and heat briefly in the microwave. Prefer it cold or don’t use a microwave? Melt the butter and stir it through the rice. Mix the chia seeds and maple syrup into the rice and slice the banana. Arrange the raisins, banana slices and walnuts next to each other on the plate. Enjoy!

This breakfast is ideal if you have leftover cooked rice from the night before. The combination of chia seeds, walnuts and banana provides a good balance of carbohydrates, fats and fibre, so you’ll get through the morning well.

Want to vary it? Replace the banana with mango or blueberries, or use honey instead of maple syrup. You can also add extra nuts or seeds to taste.
