A few weeks ago I did the paleo challenge and ate according to that lifestyle for a while. Very briefly, it means you avoid carbohydrates (in the form of wheat, pasta, rice, etc.) and eat a lot of (good) fats and proteins. Not having bread in the morning isn’t a big deal for me—I rarely eat bread anyway. But yoghurt with muesli, a smoothie with oats or similar is also not an option when you’re on paleo, because those all contain grains/carbs.

Healthy & delicious breakfast: Almond–coconut rolls with raisins

These airy almond-coconut rolls are gluten-free, easy to make and perfect for a healthy breakfast. With a touch of cinnamon and sweet raisins, they taste wonderful.

Ingredients

  • 100 g almond flour
  • 45 g coconut flour
  • 1.5 tsp cinnamon
  • 1 tsp baking powder
  • 1 small handful raisins
  • 1 small handful golden raisins
  • pinch of vanilla powder
  • 2 tbsp honey
  • 4 eggs
  • 2 tbsp melted coconut oil
  • pinch of sea salt
  • 8 tbsp water or coconut milk (I used coconut milk for a bit more moisture)

Almond–coconut rolls with raisins

    1. Preheat the oven to 180°C and grease the muffin tin with a little coconut oil.

    2. In a bowl, mix the almond flour, coconut flour, cinnamon, salt and baking powder. Now add the wet ingredients: the eggs, coconut oil, honey and the water or coconut milk. Mix everything well until you have a smooth batter. Finally fold in the raisins and spoon the batter into the wells of the muffin tin.

    3. Bake the tin for 20 minutes. You can check if they’re done by inserting a toothpick: if it comes out dry, the rolls are ready.

These rolls are ideal to prepare ahead and can be stored easily for a few days in a sealed container. They are lovely at room temperature, but also nice lightly warmed in the oven.

Want the rolls a bit moister? Use coconut milk instead of water. You can also replace the raisins with other dried fruit to taste.
