When I got peanut butter in the house, I figured it was high time to get creative with it. And what better way to spend a rainy Sunday than baking these incredibly tasty yet healthy cookies?! So you can curl up on the sofa in your joggers, snacking away while watching a film or Netflix.

Now you're probably thinking... courgette?! Let me explain. Back when I was competing in bodyfitness competitions, I started adding more vegetables to my diet — firstly to keep hunger at bay, and secondly to make sure I was getting enough micronutrients and vitamins, because that sport is incredibly demanding on your body.

Most people don't hit their recommended daily intake of vegetables and fruit. By getting creative with food like this, you can easily sneak in your veggies — without even realising you're eating them. It's become a healthy habit for me, and I always try to find creative ways to add some vegetables to every meal I eat. Courgette is a vegetable that has very little flavour of its own, which makes it perfect for this! And you'll notice: it gives the cookies a great texture, but absolutely no weird taste.

And the flavour is seriously delicious thanks to the apple and peanut butter — that's just a golden combination.

These healthy oat-courgette-apple-peanut butter cookies are simple to make and packed with good ingredients. Perfect as a nutritious snack or breakfast cookie.

  • Oven 220°C

Ingredients

  • 1 egg (size M)
  • 70 g apple (I used a Jonagold apple)
  • 125 g courgette
  • 20 g MisterKitchens orange-raisin peanut butter
  • 50 g rolled oats (I used the oats from Lidl)
  • 65 g low-fat quark (I used the Linessa from Lidl)
  • 12 g raisins
  • (for extra flavour: flavoured drops, cinnamon, or other spices)

    1. Preheat the oven to 220°C. Dice the apple and courgette into very small pieces. Mix all the ingredients together in a bowl — you'll end up with a thick batter.

    2. Line a baking tray with baking paper. Divide the mixture into 8 portions and place them on the tray, shaping them however you like.

    3. Put the tray in the oven and bake the cookies for about 25 minutes until done. Let them cool slightly, then enjoy.

These cookies are delicious straight from the oven, but they taste great cooled down too. Store them in an airtight container and ideally eat them within two days.

Want to add a little more flavour? Stir a pinch of cinnamon or a few drops of flavoured drops into the batter. That way you can tailor them exactly to your taste.
