Anyone who's ever sat in a Kölsche café knows it: the Halve Hahn. Not half a chicken, as the name might suggest, but a sturdy rye roll with mature cheese, sharp mustard and a crunchy pickle. Lay everything out on a nice serving board and you have a pub snack that instantly invites good conversation. This isn't a recipe that asks for hours, but it is one that makes an impression.

Equipment

  • Toaster or grill (optional)
  • Cutting board
  • Sharp knife
  • Serving board

Ingredients

  • 4 small rye rolls (Roggenbrötchen or dark roll)
  • 4 tbsp coarse (whole-grain) mustard
  • 200 g mature Gouda cheese, sliced
  • 4 medium gherkins
  • 1 small red onion, in thin rings
  • Freshly ground black pepper

How do you make a Halve Hahn?

    1. Slice the rye rolls horizontally in half. Want them a bit crispier? Toast them briefly in the toaster or under the grill.
    2. Spread the cut side of each roll generously with coarse (whole-grain) mustard. Use more or less to taste, but don't be stingy: the mustard is the soul of this dish.
    3. Place one or two slices of mature Gouda on each roll. The cheese can hang over the edges — that's part of it.
    4. Slice the pickles on a diagonal and scatter them over the cheese. Also add a few rings of red onion for a punchy bite.
    5. Season with some freshly ground black pepper. Salt isn't necessary — the cheese and mustard already take care of that.
    6. Arrange the rolls on a wooden serving board and bring them to the table. Serve with extra pickles and mustard on the side so everyone can add to taste.

A Halve Hahn proves that the most delicious things are sometimes the simplest. Good cheese, the right mustard and a crisp roll: that's all you need for a moment that lingers. Serve it on a wooden board and it immediately looks festive, whether it's for two people or the whole crowd.

A nice acacia wood serving board is perfect for moments like this. Robust, warm in appearance and big enough for a good portion of rolls and sides. That way you don't just put tasty food on the table, but a picture too. Taste, share and enjoy.
