Today is the day! The Netherlands play the round of 16 against Mexico. During a match, do you mostly see bitterballen and other fried treats go by, but fancy a snack that’s less dripping with oil? You don’t have to nibble on a cucumber to snack healthily. These ‘borrelnootjes’ are made from chickpeas and are therefore perfectly healthy.

These healthy borrelnootjes of roasted chickpeas are a delightfully crunchy and savory alternative to regular nuts. Perfect as a snack with drinks or just in between meals.

Ingredients

  • 200 g chickpeas (dried or canned)
  • 1 tsp turmeric
  • 1 tsp hot paprika powder
  • 1 tsp cayenne pepper
  • salt & pepper
  • olive oil

Healthy borrelnootjes

    1. Preheat the oven to 200C. If you use dried chickpeas, cook them until tender (about an hour) and then drain them well. If using canned or jarred chickpeas, rinse them first and then drain thoroughly.

    2. Put the chickpeas in a bowl and mix with the spices. We chose this mix, but of course you can vary it to your heart’s content. Make sure you always add plenty of salt & pepper for nicely seasoned, tasty bites.

    3. Spread the chickpeas over the baking tray and put it in the oven. They’ll be done after about 40 minutes. Stir a few times during baking to ensure they cook evenly on all sides. Spoon the nuts into a bowl, let them cool a little (they get even crispier), and sprinkle a bit more salt and pepper over them before serving. Viva Hollandia!

Feel free to vary the spices to your own taste. Think cumin, garlic powder or smoked paprika for a different twist. Always make sure there’s enough salt and pepper for the best flavor.

Let the nuts cool on the baking tray after baking. They’ll become even crispier. Store any leftovers in an open bowl so they stay crunchy.
