In the end I just dove into the kitchen to make the chocolate-chip cookies. I was really craving homemade cookies and had all the ingredients on hand (there aren't that many). The cookies were a huge hit with both me and my taste-testers, so I feel I can't keep this recipe from you! Full credit goes to Amber Albarda, because I didn't change the recipe at all.

Healthy treats: chocolate chip cookies

These healthy chocolate chip cookies are made with almond flour and maple syrup, making them gluten-free and free of refined sugar. Perfect as a tasty but responsible treat!

Ingredients

  • 180 g almond flour
  • 70 g dark chocolate, finely chopped
  • 1 tsp baking powder
  • 3 tbsp coconut oil, melted
  • 4 tbsp maple syrup
  • 2 tsp vanilla extract

Healthy treats: chocolate chip cookies

    1. Preheat the oven to 180 C and line a baking sheet with parchment paper.

    2. In a bowl, mix the almond flour, chocolate and baking powder. In another bowl, mix in the coconut oil, maple syrup and the vanilla extract and stir until smooth. Add the wet mixture to the dry ingredients and stir until a sticky dough forms.

    3. Roll the dough into balls, place them on the parchment paper and press them slightly flat so they become cookies. They should be about one centimeter thick. Bake the cookies in the oven for 15 minutes. Want extra crispy cookies? Add another minute. If you like them nicely chewy set them in for 14 minutes.

These cookies are wonderfully soft inside and lightly crisp on the outside. Store them in an airtight container at room temperature and enjoy them for up to five days.

Adjust the chocolate to your preference: use finely chopped dark chocolate for a rich flavor, or choose milk chocolate if you prefer something sweeter.
