Ingredients

  • 1 live lobster (approx. 600–700 g)
  • 100 g unsalted butter
  • 2 garlic cloves, finely chopped
  • 2 tbsp fresh parsley, finely chopped
  • Juice of 1 lemon
  • Salt and freshly ground pepper
  • 1 bay leaf
  • A few peppercorns
  • Fresh baguette, to serve

How to make boiled lobster with herb butter and lemon?

    1. Bring a large pot of well-salted water to a boil. Add a bay leaf, half a lemon and a few peppercorns for extra flavor.
    2. Carefully place the lobster into the boiling water and cook it for 12 to 15 minutes, depending on weight (allow about 10 minutes per 500 grams).
    3. Meanwhile make the herb butter: melt the butter over low heat and stir in the finely chopped garlic, parsley, lemon juice and a pinch of salt. Keep warm on the lowest setting.
    4. Remove the lobster from the water and let it drain briefly. Place it on a cutting board and halve it from head to tail with a sturdy chef’s knife.
    5. Use a lobster cracker to easily open the claws and legs. Apply just enough force so the meat stays intact.
    6. Serve the lobster on a large plate with the warm herb butter in a separate bowl, lemon wedges on the side and optionally some fresh baguette to dip in the butter.
