In summer I prefer to eat salad every day. It's tasty, fresh, healthy and you can vary it endlessly. That a salad doesn't always have to be packed with ingredients to be delicious is proved by this winner. Ready in no time, super tasty! The raspberry vinegar really makes this dish =)

Fresh salad with smoked chicken

This fresh salad with smoked chicken, vine tomatoes and spring onions is on the table in no time. A drizzle of olive oil and raspberry balsamic vinegar finishes it off.

Ingredients

  • Oak leaf lettuce mix
  • Smoked chicken
  • Vine tomatoes
  • Spring onions
  • Raspberry balsamic vinegar
  • Olive oil
  • Salt & pepper. Quantities to taste. For 2 people I used 1 bag of salad, 300 g chicken, 3 tomatoes and 2 spring onions.

Fresh salad with smoked chicken

    Easy as can be! Put the lettuce in a bowl, slice the spring onions, tomatoes and chicken and add them to the lettuce. Give everything a quick toss, season with salt, pepper and olive oil, and finish with a good drizzle of raspberry balsamic. If you'd like more ingredients, or prefer not to eat meat, you can vary it by adding goat cheese and raspberries and/or leaving out the chicken. Enjoy!

This salad is perfect for a quick lunch or a light meal. The raspberry balsamic vinegar gives a lovely sweet-and-sour note that pairs well with the smoked chicken.

Want to mix it up? Add some goat cheese and fresh raspberries, or leave out the chicken for a vegetarian version. That way this recipe suits every preference.
