This is one of those dishes that makes me ridiculously happy. It's super healthy (because: all fresh, full of good fats and vitamins), looks amazing and is absolutelyfoolproof. Seriously, you really don't need to be good at cooking to pull this off. Chopping, grilling and stacking,that's all. You can serve the eggplant tartlet as a side, as a lunch or (maybe with one layer less) as an impressive snack. Or just in between meals, because this really always tastes good.

Fantastic eggplant tartlet

This fresh eggplant tartlet is a party on your plate. Layers of grilled eggplant, creamy hummus, soft avocado and sweet cherry tomatoes make this dish as simple as it is impressive.

Ingredients

  • 1 eggplant
  • 1 ripe avocado
  • homemade hummus
  • 8 cherry tomatoes
  • fresh parsley
  • olive oil
  • salt & pepper

Fantastic eggplant tartlet

    1. Cut the eggplant into slices just under 1 cm thick. Heat some olive oil in a grill pan, season the slices on both sides with pepper and salt and grill them until cooked (they'll take on a slightly glossy texture). Make sure not to grill the eggplant too long or it will become limp.

    2. Wash and halve the cherry tomatoes. When the eggplants are done, spread them over a plate and grill the tomatoes the same way. Grilling makes the tomatoes wonderfully sweet and flavorful. Remove the avocado from its skin and slice it thinly. Now let's build the tartlet!

    3. Start with a slice of eggplant, spread a layer of hummus on it, place a slice of avocado on top and finish with a tomato. Then start again with eggplant, hummus, avocado, tomato… Repeat until you've used everything three times. Chop the parsley finely and sprinkle it over at the end. Enjoy!

This tartlet is lovely as a light lunch or as an impressive starter. Make sure to grill the eggplant well so it gets a nice glossy texture, but take it off the heat in time so it keeps its firmness.

Preferably use homemade hummus for the best flavor. The fresh parsley as a finishing touch gives the tartlet a beautiful color and a fresh note. Serve immediately after assembling for the best result.
