300 g mixed cabbage (150 g red cabbage and 150 g green cabbage, finely shredded)
200 g carrots, julienned (about 2 medium carrots)
200 g edamame beans, thawed and shelled
50 g crispy ramen noodles or 50 g chopped peanuts, for extra crunch
For the soy-ginger dressing:
3 tablespoons soy sauce
1 tablespoon fresh ginger, grated
1 tablespoon honey or agave syrup (for a natural sweetness)
1 tablespoon sesame oil
1 clove of garlic, finely chopped
Juice of 1 lime (about 30 ml)
Instructions
Prepare the chicken marinade: In a bowl, combine 2 tablespoons of sesame oil and 2 tablespoons of soy sauce. Add the chicken strips and stir to coat. Cover and marinate in the refrigerator for at least 30 minutes for extra flavour.
