Burn in de Buyer pans
Before using a de Buyer pan can be used, you must first burn it to create a non-stick layer. To burn in the pan you need a type of oil, however, olive oil does not work well, it cannot handle high temperatures. Put the pan on the stove and heat it on low heat. Pour a generous layer of oil into the pan and let it cook for 5 minutes. Do not be alarmed by the formation of smoke, this is normal. After 5 minutes you can pour off the oil and dry the pan with kitchen paper, the intention is to leave a small layer of oil in the pan. From now on you can use the pan normally.
How to maintain a de Buyer pan?
During use, the pan becomes increasingly blacker and better protected against sticking. Never wash the pan with detergent after use. Hot water is sufficient to clean the pan. This way, the pan remains slightly greasy and the nonstick coating remains intact. The longer the pan is used, the better the non-stick coating becomes.
