The Kai Shun Classic Santoku Knife 18 cm has a stainless, damask steel blade of 18 cm with a hardness of 61-62 HRC. The blade consists of 32 layers of steel, making it highly resistant to corrosion and ensuring that it remains sharp. It also creates the distinctive semi-glossy pattern that gives the knives their beautiful, classic Japanese appearance.
Use the knife for cutting meat, fish, and vegetables. The pakkawood handle closes completely around the blade, so the handle cannot come loose and is well protected from dirt. The knives are hand-sharpened before they are sold, so each one is razor-sharp.
